1st Course

On the palate, the wine offers crisp apple pie and lime characters. It has agreat drive and length with a balanced dosage.

2nd course

Caramelised pork // fennel, apple & vanilla

Reflecting another outstanding vintage in Western Australia’s leading Riesling region, this is a softly textured, crisp, dry, lemon-lime fruited wine with a fine line of acidity.

3rd course

King Salmon // parsnip, butter & thyme

Vibrant, perfumed Grenache with classic raspberry, musk and earthy notes. Serve lightly chilled.

5th Course

Soft, fleshy-textured Shiraz displaying blueberries and spice, supple tannins and stylish French oak influence.

6th Course

Aged cheddar & spiced quince

A full-flavoured yet finely structured Cabernet of great appeal: black berries, dried leaves and fine gravelly tannin, reflect an outstanding year.

7th course

Pear & rosemary tarte tatin  // vanilla crème anglaise

Wine pairing

CRAIGMOOR RUMMY – MUDGEE NSW

A bright, lighter style of fortified tawny, with lots of raisins, a little rancio and lovely nutty complexity. Lingers rich, sweet and long.
